Nicole Henretty of BWH Nutrition showed patients, families and employees how to be cool as a cucumber with an easy-to-prepare recipe for cucumber dip last month during the debut of a new program. The “Pleasing the Palate” series features monthly demonstrations on preparing snacks such as fruit dip, beet slaw and tomato bursts.
“We will use different cookbooks from the library each month and demonstrate how to make a simple, but tasty dish,” said Cara Helfner, chief librarian at Kessler.
The cucumber dip recipe involves no cooking and uses fresh, easy-to-find ingredients including nonfat yogurt, garlic, lemon juice, dill and walnuts. Henretty prepared the dish in just under 10 minutes, and participants enjoyed the snack with whole wheat pita chips.
Kessler Library is partnering with BWH Nutrition and Food Services on this series, and each recipe will meet daily nutritional needs.
